BLACK BEAN CHORIZO SOUP

INGREDIENTS

2 cans (15.5 oz. ea.) black beans, undrained
2 cups water
8 ounces chorizo sausage, chopped
1 medium onion, chopped
2 medium carrots, chopped
2 stalks celery, chopped
3 cloves garlic, chopped
2 LINZ® Beef Bouillon Cubes, crumbled
1 tsp. ground cumin
1/2 tsp. ground black pepper
1/4 tsp. ground cayenne pepper

PREPARATION

Combine all ingredients in slow cooker. Cook covered on LOW 8 to 10 hours or on HIGH 4 to 6 hours. Serve, if desired, with sour cream and chopped fresh cilantro.
